I’m working on a new project related to nutrition and I am publishing a meal plan a day from different diets with the end goal of having a complete 14 days meal plan with shopping list and all the necessary information.

I wanted to share with you my 1st day of Keto complete meal plans. Hope you enjoy it.

Breakfast

2 eggs fried in 1 Tbsp butter, topped with ½ avocado sliced and 2 slices bacon, crumbled – 546 kcal

Season with salt, pepper and Tabasco sauce to taste

Snack

30 g (about 12) macadamia nuts – 200 kcal

Lunch

Tossed salad with 60g raw spinach, 120g cherry tomatoes, 15g sliced almonds and 15g feta cheese, dressed with 2 Tbsp olive oil and 1 Tbsp balsamic vinegar – 424 kcal

Snack

30g natural peanut butter – 210 kcal

Dinner

Cheese-steak Stuffed Peppers, 2 pepper halves – 326 kcal

The detailed recipe is as follows:

INGREDIENTS

4 bell peppers, halved

1 tbsp. vegetable oil

1 large onion, sliced

16 oz. cremini mushrooms, sliced

Kosher salt

Freshly ground black pepper

1 1/2 lb. sirloin steak, thinly sliced

2 tsp. Italian seasoning

16 slices provolone

Freshly chopped parsley, for garnish

DIRECTIONS

Preheat oven to 325º. Place peppers in a large baking dish and bake until tender, 30 minutes.

Meanwhile, in a large skillet over medium-high heat, heat oil. Add onions and mushrooms and season with salt and pepper. Cook until soft, 6 minutes. Add steak and season with more salt and pepper. Cook, stirring occasionally, 3 minutes. Stir in Italian seasoning.

Add provolone to bottom of baked peppers and top with steak mixture. Top with another piece of provolone and broil until golden, 3 minutes.

Garnish with parsley before serving.
