Recipe takes about 15 mins prep time and the results are amazing!!!

Tested on non-keto folks; verdict – deliciousssss 🙂

Cheesecake base:

2 cups almond flour

3 tbsp cocoa powder

7 tbsp melted butter

1/3 cup sweetener of your choice (I used Natvia, but Swerve/erythritol is good too)

Mix above and bake for 8mins at 180C (350F) then set aside…

Cheesecake top:

450g (16oz) cream cheese

2 eggs

2 tbsp instant coffee

1/2 cup sweetener

1 tsp vanilla extract

Blend the above until smooth and pour over the base, bake for additional 25-30mins (until set.. firm but jiggly centre) at 180C (350F)

Set aside to cool down for at least an hour, then slice up your squares and refridgerate. Best eaten after chilled! Enjoy 🙂
