HAPPY NEW YEAR!!! Cure those hungover headaches with these DELICIOUS KETO CHOC-CHIP BLONDIES


1 cup blanched almond flour
½ cup powdered erythritol, or granulated sweetener of choice*
¼ teaspoon baking soda
½ teaspoon salt
5 tablespoons grass-fed butter, softened
1 egg
1 teaspoon vanilla extract
milk chocolate bar, chopped



1.Preheat oven to 350 degrees F. Line an 8x8inch square baking dish with parchment paper.
2.Combine all dry ingredients (except chocolate) in a large bowl.
3.Add softened butter, egg, and vanilla extract, and stir until combined.
4.Fold in chocolate chunks, reserving a few chunks to garnish the top.
5.Spread batter evenly into baking dish, and top with remaining chocolate chunks. (note: batter may be thin when spread into pan, but will rise while baking. Make sure to line pan with parchment paper, and add the full amount of chocolate. 1 chopped bar is equivalent to about 1/2-3/4 cup chocolate chips)
6.Bake for about 27 minutes, until lightly golden brown on the edges.
7. Allow to cool, slice, and enjoy!
